as promised...

Black Bean Brownies!
*1 can black beans (15oz), drained
*3 large eggs
*1/3 cup melted butter
*1/4 cup cocoa powder
*1/8 teaspoon salt
*2 teaspoons vanilla extract
*1/2 cup agave nectar
*1/2 cup chocolate chips, or peanut butter chips or peanuts, or whatever.

Preheat oven to 350.  Combine everything except the choc. chips in a food processor. Puree til smooth and looks like brownie batter. Gently stir in choc. chips. Bake in buttered 8 by 8 pan for 30-35 minutes.

I'm excited to make these again!
I also want to try it with peanut butter, and Nutella.

  1. They must be yummy if you want to make them again. Does it justify the need to have chocolate every night if there are healthy beans in them?

  2. Honestly I think so! You just gotta watch out for what too many beans will do to ya....and the kids for that matter.
