rice pudding {the recipe}

Fear not, I have a great way for you to use it up!
There are many great rice pudding recipes out there, this one may not be the best, but unlike many others I LOVE that it uses cooked rice, so I always have a way to use up our leftovers.
What you'll need:
* 4 eggs
* 2C. milk
* 1/2C sugar
* 1 Tbl. butter (melted)
* 1tsp. vanilla
* 1/4tsp. salt
* 2C cooked rice
* 1/3C raisins
* 1Tbl. Cinnamon
* 1/2 tsp nutmeg
Preheat oven to 325. In medium bowl beat eggs. Blend in milk sugar, butter, vanilla, and salt. Stir in rice and raisins. Pour into a greased 1 1/2 quart casserole dish. Bake at 325 for about 40 minutes, then gently stir up rice and raisins from the bottom. Bake an additional 30-40 minutes, or until a knife inserted half way comes out clean. Serve and sprinkle with Cinnamon sugar.
