couscous for breakfast
If you make just one recipe from this blog, let THIS be the one.
What you need:
1 1/4 C. couscous
2 tsp. ground cinnamon
1/2 tsp. ground cloves
1 to 2 tbsp. sugar
1 1/4 C. Boiling water
1 tbsp. sunflower oil, olive oil, or butter
4 tbsp. melted butter
3/4 C unsalted pistachios (optional)
1/2 C. golden raisins and, or normal raisins (I'll add 1C of raisins if I'm leaving out the pistachios).

* put couscous in a heat proof bowl
* add cinnamon, cloves, and sugar.
* Pour in boiling water, cover and let stand for 10-15 minutes so the water can fully absorb.
meanwhile...
* Melt 4 tbsp of butter in sauce pan.
* add pistachios and cook over medium heat (stirring often), for 1-2 minutes or until you can smell the nutty smell.
* Add the raisins to the nuts and cook until they are nice and plump.
* once all the water has been absorbed into the couscous, add sunflower oil and work it through until any clumps are gone.
* Pour the butter soaked pistachios and raisins into the couscous.
* In a glass measuring cup or small bowl warm some heavy cream, half and half or whole milk (about 1/4 cup per serving). This is all to taste (or how much fat you want to eat for breakfast) For my kids I give them straight cream, but me, I use milk or half and half.
* pour warm cream or milk over couscous along with a drizzle of honey. Try different flavors of honey, agave, buckwheat, or local honey.
**I did not have any pistachios this time around. Also, I accidentally got
the larger sized couscous...BIG mistake. Stick with the normal ones**
